Chickpea Green Goddess Sandwich

Satisfying, Green Goddess Chickpea Sandwich 

The most filling, satisfying and delicious lunch, not to mention it's so easy to make! Check out the Droosh Green Goddess Dressing recipe when making this sandwich as it's a key component in this recipe.

INGREDIENTS: 

  • 2 slices sourdough bread 
  • 1/2 Persian cucumber 
  • 1/4 serrano thinly sliced 
  • A couple thin slices of white or red onion 
  • Two thin slices tomato - we recommend Roma
  • However much cheese your heart desires- we love white Cheddar with this recipe
  • 1 tbsp olive oil 
  • 2tbsp Chaat Party Spice Mix 
  • S&P to taste
  • 1/2 lemon
  • 1-2tbsp Droosh Green Goddess Dressing 
  • 1/2-1 cup mashed chickpeas 

 

DIRECTIONS: 

  • Prep chickpeas by rinsing, draining and letting them dry 
  • While chickpeas are drying, prep veggies by slicing cucumbers, serrano, onion and tomatoes 
  • Once chickpeas are dried, add to a bowl with olive oil, Chaat Party, lemon and S&P to taste and mash with a fork or potato masher
  • Once mashed its now time to assemble your sandwich 
  • Spread mashed chickpeas on one slice and green goddess on the other slice
  • Layer on cheese and serrano to the slice with green goddess 
  • Add onion, cucumber and tomatoes to the slice with chickpeas 
  • Cut in half and enjoy!
