Nani's Aloo (Potatoes)

The Easiest Indian Potato Recipe!!

 

INGREDIENTS: 

  • 3-4 Large russet potatoes, cleaned and peeled
  • 1/2 tsp Mustards Seeds
  • 1tsp Cumin Seeds
  • Pinch of hing
  • 2 tsp Chaat Party (1 tsp if only using 1-2 potatoes)
  • 2 tsp Everyday Spice
  • 1/4 tsp Turmeric for color 
  • 3 garlic cloves minced
  • 1 tbsp ginger minced
  • 1-2 roma tomatoes chopped (optional)
  • 1 Red or Yellow Onion diced
  • 1 Jalapeno or Serrano diced 
  • 1-2 lemons
  • Cilantro for garnish

 

INSTRUCTIONS: 

  • Wash potatoes and then boil until fork tender
  • Once soft, drain and break up with a fork 
  • Heat up a deep pan with ghee or oil and add mustard seeds, cumin seeds and pinch of hing- let toast for 2 min
  • Add garlic, ginger, onion and jalapeno and sauté for 5 minutes on low 
  • Add water if needed and tomato if using 
  • Add in potatoes and all the spices listed above 
  • Mix together and cover for 5-10 minutes on very low heat so the spices can soak into the potatoes 
  • Garnish with cilantro and the juice of 1 lemon

TIP

  • You can even use sweet potatoes in this recipe!
