Tikka Masala Rotisserie Chicken Sandwich

Turn Your Leftovers Into Something Delicious in Under 10 Minutes

Serena made this sandwich in under 10 minutes for lunch in between work calls and was so pleased with how it came out, given she just made it up on a whim. Take any leftover chicken you have whether you grilled it yourself or have a rotisserie chicken on hand and shred it. Mix shredded chicken with the tikka mix and the below ingredients and bam it’s a bomb chicken tikka masala sandwich- just without the tikka sauce. It’s delicious, and when paired with the arugula, avocado, cheese and your favorite bread it’s the most satisfying lunch you’ll make all week, in under 10 minutes.

INGREDIENTS 
  • 2 cups shredded chicken
  • 1 cup shredded cheese of choice
  • 4 slices bread of choice
  • Handful of arugula
  • 1tsp minced garlic 
  • 1 avocado
  • 1 lemon
  • 1 cup thinly sliced cucumber
  • 1/3 cup greek yogurt
  • 1/3 green chili sliced
  • Salt & Pepper to taste
  • 2 tbsp Tikka Masala Spice Mix
    DIRECTIONS
    • Shred rotisserie chicken, heat up in microwave if needed and place in a bowl
    • Mix greek yogurt, juice of 1/2 a lemon, 2 tbsp tikka masala spice, minced garlic and S&P to taste
    • Once mixed set aside
    • Toast bread slices to your desired toast-iness
    • Chop green chili and cucumber into thin slices and cut an avocado in half
    • Assemble your sandwiches in the following order: Spread avocado on one slice of bread and sprinkle some tikka masala mix, lemon juice and sliced cucumbers
    • Add shredded cheese on the other slice of bread and spoon the mixed shredded chicken and place sliced green chilis on top
    • Add a handful of arugula on top of chicken and place avocado cucumber side on top
    • Cut in half and enjoy
    Tip:
    • This goes great dipped in Droosh's homemade cilantro chaat chutney!
