SERVINGS: 6 | PREP TIME: 2 HOURS | COOK TIME: 5 MIN

INGREDIENTS:

  • 1 cup red lentils or masoor dal
  • 3 cups water for soaking lentils
  • 1/2-1 Serrano chili or jalapeno
  • 1 inch ginger
  • S&P to taste
  • ½ cup water for blending
  • 1/2 cup cilantro chopped for garnish
  • Oil for cooking
  • 1-2 tbsp Droosh Chaat Party or Everyday Spice

DIRECTIONS:

  • Rinse and drain masoor dal and soak in water overnight or at least 2 hours
  • Drain out all the water and then add the lentils to a blender
  • Add cilantro, serrano or jalapeno, ginger, salt, Droosh Chaat Party or Everyday spice and water to make a fine batter and stir
  • Blend until it's a pourable pancake like consistency and set aside for a few minutes
  • Heat a non-stick pan on low-medium heat with oil
  • Pour around ⅓ cup of batter or just eyeball it like we do, and spread it into a round pancake shape- remember it doesn't need to be perfect!
  • Cook on medium heat for 2 to 3 minutes then add a few drops of oil to the side that isn't cooking and then carefully flip the pancake for another 2-3 minutes, until golden brown
  • Continue cooking until all the batter is used up
  • Garnish with cilantro and red onion, and serve with spiced yogurt or green chutney

TIPS

  • These pancakes are a perfect make-ahead recipe and you can refrigerate them in an airtight container for 3 to 5 days
  • To reheat simply place them on a hot pan and cook on both sides for 1 to 2 minutes
  • To make spiced yogurt simply combine plain yogurt with 1tsp Chaat Party, S&P and a squeeze of lemon
