Lemon Shrimp Pasta

Tikka Masala Lemon Shrimp Pasta is a delightful fusion dish that combines the rich flavors of tikka masala with the brightness of lemon and succulent shrimp. The dish features tender shrimps infused with aromatic spices, and served over a bed of perfectly cooked pasta.

INGREDIENTS 

For the Shrimp Marinade:

  • 1 pound small - medium sized shrimps, peeled and deveined (frozen is fine too just make sure it's thawed)
  • 2 tbsp Droosh Tikka Masala spice
  • 1 tsp ginger minced 
  • 2 tsp garlic minced
  • 1/2 a lemon 
  • Salt and pepper to taste

For the Sauce:

  • 1 onion, finely chopped
  • 2 garlic cloves minced
  • 1-2 cups broccoli steamed
  • 1/2 cup heavy cream
  • 2 cups veggie broth
  • Salt and pepper to taste

For the Pasta:

  • 1 box pasta of choice- we love Banza chickpea for a healthier alternative
Additional Ingredients:
  • Zest and juice of 1 lemon
  • Crushed red pepper
  • 1/2 cup parsley 
  • Parmesan for serving 

 

DIRECTIONS: 

  • In a bowl, combine all the ingredients for the shrimp marinade and mix well. Let the shrimp marinate for at least 15 minutes

  • While the shrimp is marinating prep your veggie ingredients by chopping ginger, garlic and onion and steaming broccoli

  • Cook the pasta according to package instructions; drain and set aside

  • In a large pan, heat butter or oil over medium heat and add chopped onions and sauté until golden brown

  • Add garlic and ginger to the onions and sauté for an additional 2 minutes

  • Stir in the veggie broth, 1 tbsp tikka masala spice and salt to taste

  • Simmer the sauce for 2 minutes until it thickens

  • Add marinated shrimp until they turn pink about 3-5 minutes on medium heat

  • Add heavy cream and broccoli and stir

  • Toss the cooked pasta into the sauce and shrimp mixture, ensuring everything is well combined and then add 1/2 tsp lemon zest and more juice to the pasta, adjusting salt and pepper to taste

  • Garnish with fresh parsley, crushed red pepper and Parmesan
